Cauliflower Rice
With the cold weather here I have been craving a lot of hearty home cooking so I have been consciously looking for low carb easy to make meals that are filling and packed full of nutrients. A few weeks ago I decided to give cauliflower rice a try and it turned out amazing. It's light and fluffy and is surprisingly grain like and so easy to make. It's versatile, I have been playing around with different flavours and it's really easy to make up different side dishes. Cauliflower is great source of vitamin C, K, magnesium, omega-3 fatty acids and it's known for its anti-inflammatory properties.
This recipe is a keeper and I'll definitely be putting it on our weekly meal rotation. Enjoy!
Ingredients:
1 Head of Cauliflower
1 Cup of peas (or more if you would like)
1 Tbsp Turmeric
1/2 Tbsp Chili powder
1/2 Tbsp Cumin
1/2 Tbsp Salt
Knob of butter, Ghee, or Coconut oil
Instructions:
1. Wash and dry cauliflower. Remove all greens.
2. Chop cauliflower into smaller pieces and put in food processor with grater/shredder (If you don't have a food processor chop the cauliflower finely)
3. Using butter or your choice of fat sauté in a large skillet over medium heat and all spices
4. Cook for 5 mins - 7 mins
5. Add peas and cook for an additional 5 mins
